Worthy's Baked Rhubarb Glazed Chicken

This is a meal packed full of flavour with minimal effort featuring Worthy's Vanilla Rhubarb Jam. This recipe is sure to keep you happy and full!

  • Ingredients

    4 chicken breasts (bone-in, skin on)

    1/4 Cup Worthy Vanilla Rhubarb Jam

    2 tbsp balsamic vinegar

    1 tsp dried thyme leaves

    1/4 tsp salt

    1/8 tsp pepper

    *Serve with steamed rice

  • Utensils

    1 Set of Measuring Tools

    1 Baking Sheet

    1 Roll of Tin Foil or Non-stick spray

    1 Small Saucepan

    1 Basting Brush

    1 Meat Thermometer

  • Step 1: Preheat oven to 400°F.  

    Step 2: Line a baking sheet with foil and lightly oil or coat it with nonstick spray.

    Step 3: Season chicken with salt and pepper on both sides, then rub each breast with ¼ tsp thyme under the skin.  

    Step 4: Place bone-side up, and skin-side down, in a single layer on a prepared baking sheet and roast for 20 minutes.

    Step 5: In a small saucepan, heat Worthy's Vanilla Rhubarb Jam and balsamic vinegar over medium-low heat until the glaze is melted.  

    Step 6: Turn chicken meat-side up.

    Step 7: Brush under the skin and over the skin with jam glaze. 

    Step 8: Continue to roast, brushing twice with the remaining glaze, until the chicken is cooked through, and the meat thermometer reads 165°F (about 20 minutes more).

    Step 9: Serve with steamed rice.

    Step 10: Enjoy!
